At the Village Dining Hall, we offer seasonal wild vegetables and Wagyu beef dishes that will make you feel the coming of spring, and we look forward to welcoming you. Please enjoy a special moment with the gentle spring breeze of Karuizawa, feeling the season of new buds.

Shrimp and wild vegetable tempura 2,400 yen

This dish is made with a generous amount of seasonal mountain vegetables, including bamboo shoots and udo. It also includes a tempura of spring onions and rape blossoms, as well as shrimp, allowing you to fully enjoy the flavors of early spring, available only now.
*The mountain vegetables served may change depending on the availability of produce.

Wagyu beef and watercress hotpot with Japanese pepper 4,500 yen

How about a hot pot for one person in the spring season? This dish combines Wagyu beef with the refreshingly spicy flavor of watercress, creating a Shinshu local dish called "Touji Soba." The tangy accent of Japanese pepper enhances the flavor. Simply "toss" the soba noodles, which are placed in a small basket, into the hot pot and enjoy.

The signature dish at the Village Dining Hall, "Shinshu Colorful Gozen," has been given a spring makeover. It's a heartwarming meal perfect for the cold season, featuring tempura of wild vegetables such as butterbur shoots and udo buds, as well as beef stew with plenty of vegetables.

A variety of wild vegetables are served on top of soba noodles. The dish is finished with a refreshing dipping sauce made with bonito stock. The rich, special sauce hidden at the bottom of the bowl allows you to enjoy different flavors.

Wagyu beef and mountain vegetable broth soba noodles 2,050 yen

The dipping sauce is characterized by its dashi stock that is packed with the flavor of Wagyu beef, and it also contains mountain vegetables that bring out the natural flavor. Enjoy the exquisite harmony of the firm soba noodles mixed with the dipping sauce.
